Implement and test variables from GEOS

Reproduces the expected output bit-for-bit. Still missing a port for geos_surface_temperature. The geos_ice_fraction and geos_land_ice_fraction variables are under-tested as the expected output is mostly zeros for both.

Test locally by following procedure in the README (not all tests are run on CI yet). Will need to run the rsync command again as new test files have been added.
